Salmon Skippers
2 cups canned salmon
2 eggs; well-beaten
1 tablespoon minced onion
1 tablespoon chopped green pepper
1 tablespoon chopped parsley (optional)
1/2 teaspoon salt
speck of pepper
Pick over and flake salmon. Combine with other ingredients. Season with salt and pepper. Shape into 8-10 cakes. Coat with flour and brown quickly on both sides in hot frying pan containing enough oil to cover bottom generously. Lift out patties and place on a slice of Cranberry Sauce. Makes 8 to 10 patties.
